Blueberry Muffins for breakfast

Muffins are a quick breakfast. They can be mixed easily, and I always make a triple batch to freeze for those quick breakfasts. Every fall we go and pick blueberries and have so much fun doing it. We pick enough to enjoy fresh and enough to freeze for a year of blueberry buckles, pancakes, and muffins.   

 

·        1 ½ cups flour·        ¾ cup sugar·        2 teaspoons baking powder·        1 egg·        2 tablespoon melted butter·        ¼ cup water·        ½ cup orange juice·        ½ pint blueberries (thawed) 

 

  1. Preheat oven to 400
  2. Mix dry ingredients together
  3. Mix wet ingredients together
  4. Combine both till moistened
  5. Spoon into pre-greased muffin pans
  6. Bake for 15 minutes
