quick chicken risotto

Risotto takes time and concentration to prepare gently stirring and adding broth.  This not possible with a houseful of kids.  This recipe promises to be easier and quick.  The oldest 15 years old can lend a hand by stirring the risotto.

 

5 cups broth

3 tbls butter

1 medium chopped onion

I minced garlic clove

2 chicken breasts diced

1 ½ cups Arborio rice

1 cup dry wine

½ cup pesto

parm cheese

 

sauté chicken onion in butter

add rice to coat

add wine stir till absorbed

slowly add broth ½ cup at a time, stirring about 5 minutes between each addition

cook till creamy and slightly past al dente.

Stir in pesto sauce.

Sprinkle with cheese
