Easy tasty Tuna Rice Casserole
I was in the mood for a casserole tonight. It rained all day and I really didn’t feel like standing and sweating over the stove. This casserole is simple and comes together easily. The kids all had seconds which was surprising since my children don’t like fish. This tuna casserole doesn’t taste fishy even though it has huge chunks of tuna in it. I served it with steamed broccoli. Perfect easy meal for kids.
3 cups of rice
¼ cup flour
¼ cup butter
1 cup milk
2 large cans of tuna
1 cup mayonnaise
½ cup sour cream
½ cup salsa
one medium onion chopped
Preheat oven to 400
cook rice
while rice is cooking make a white sauce
melt butter
add onions cook for 5 minutes
add flour cook for 3 minutes stirring constantly
add milk cook till thickened
mix rice with tuna, mayonnaise, sour cream, white sauce and salsa
add mixture to casserole dish and bake for 20 minutes
