Kid friendly starch substitutes
The down spiral of the economy is affecting everyone. I went from a fully stocked pantry with a weekly shopping list and budget to a mom who scrimps and scrapes to try and make nutritious meals and easy meals for kids. It is not easy trying to shield the children from the financial woes going on. So far so good. We have had to give up desserts and only have them once a week. Our vegetarian meals are more common with mostly pasta, rice and potatoes being our staple starches. With pasta prices increasing I have had to find substitues. I have been using cornmeal alot since it is still affordable. I make polenta, cornmeal pancakes, and corn mash to replace the price rocketing pastas. I may even take a stab at making my own pasta, maybe semolina is still within our budget.
