Baked Chicken Wings and cornmeal pancakes
Cornmeal pancakes were a perfect pairing with the chicken wings. They were really easy to make and were very tasty. The kids enjoyed them and they cooked up quickly and nicely without a mess.
- 1.5 cups cornmeal
- 2 cups boiling water
- 4 eggs
- 2 cups flour
- 2 tablespoons baking powder
- 1.5 tsp baking soda
- 2 cups sour milk or buttermilk
- Mix the cornmeal with boiling water till it thickens
- add the milk, oil and eggs
- Mix till smooth
- Add the flour, baking soda, salt and baking powder.
- Heat griddle and cook pancakes 1/4 cup for each pancake.
