Baked Chicken Wings and cornmeal pancakes

Cornmeal pancakes were a perfect pairing with the chicken wings.  They were really easy to make and were very tasty.  The kids enjoyed them and they cooked up quickly and nicely without a mess.

  • 1.5 cups cornmeal
  • 2 cups boiling water
  • 4 eggs
  • 2 cups flour
  • 2 tablespoons baking powder
  • 1.5 tsp baking soda
  • 2 cups sour milk or buttermilk
  1. Mix the cornmeal with boiling water till it thickens
  2. add the milk, oil and eggs
  3. Mix till smooth
  4. Add the flour, baking soda, salt and baking powder.
  5. Heat griddle and cook pancakes 1/4 cup for each pancake.
