tasty Chicken and biscuits

This always a favorite .  The love the smell of biscuits baking.  The whole meal takes about an hour to fix, with children style interruptions.

 

4 chicken breasts

4 medium carrots diced

2 green bell peppers

4 cups of milk

2 cups water

1 tsp garlic

½ lb chopped bacon

1 large onion chopped

2 tablespoon soy sauce

Salt & pepper to taste

 

Gently cook the chicken in the water.  Add garlic powder and salt

Cook over low heat.

Remove chicken after 30 minutes of gentle simmering

Once chicken has cooled, shred the meat (I used clean fingers) season with soy sauce.

Put carrots in pan to cook.

In separate pan, crisp bacon—remove from pan

Caramelize onions in bacon grease

Add chopped bell pepper to onions

Cook until most of the liquid evaporates

Add ½ cup flour; cook for 2 to 3 minutes do not brown

Add milk heat gently till thickened

Add vegetables and sauce to pot with cooked carrots

Add shredded chicken

If not thickened to desired consistency add more flour (make a flour and water paste – add some sauce to it and pour it back into pot)

 

Serve over homemade biscuits
