easy baked hubbard squash soup
Yesterday we had baked hubbard. So what to do with left overs? A baked hubbard soup. This soup is incredible and the kids love this easy kids meal.
About half a hubbard squash baked
2 cans chicken broth
Milk or heavy cream
Cinnamon
2 medium onions
½ lb bacon
½ cup butter
Caramelize onions in butter- remove from pan
Chop bacon and cook till crisp-remove from pan
Process the squash in food processor till smooth.
Add squash, broth, milk, cinnamon to pan
Add milk to desired thickness.
