Baked Hubbard Squash

We had Hubbard squash for dinner tonight.  A friend of mine dropped by four big squashes.  He must have planted the squash and not known how big they would get.  On top of that he had no idea how to cook or prepare the squash.  So he knew me and the kids love squash so here we are. 

Baked Hubbard SquashWash the dirt off the squash.  We love to eat the skin of the baked squash.Preheat oven to 375Cut squash into manageable piecesMake a mixture of honey, water and cinnamon (or ginger).Pour the mixture into the baking pan and place the squash flesh down. Bake it until the squash is tender.Flip it over and place thinly sliced butter and sprinkle cinnamon over the pieces and bake till cooked through. Enjoy!
