open face bacon and tomato sandwich

I was given a bushel of tomatoes today and it had me thinking of my favorite summertime treat.  Fresh tomato sandwich.  There is something in the sun warmed tomato between two pieces of bread—soaking the bread with its juices.  I decided to make something more substantial, tomato bacon open faced sandwich. 

 

  • 2 large tomatoes sliced

  • 16 slices of Canadian bacon

  • 8 slices of French bread

  • garlic

  • 1 onion sliced

  • 8 tsp olive oil

  • salt

  • ground pepper

 

  1. cook Canadian bacon

  2. top bread tomato slice, bacon, onion, salt, pepper, and repeat layers.

  3. Drizzle oil over the top

 

Serves 8
