Tortillas homemade, easy and tasty
Tonight was our Mexican Food night but I really didn’t have any great ideas. The kids didn’t want rice so and I didn’t have tortillas. Then it occurred to me that maybe I should give it a whirl. The whole batch took me about 25 minutes to make.

4 cups flour

1.5 tsp baking powder

1 tablespoon taco seasoning

½ cup shortening

1.25 cups hot water

Put the flour, baking powder, seasoning, shortening into a standing mixer with a paddle,

After a few minutes pour the water in as a stream

When dough forms change out the paddle for the dough hook and mix for a few minutes

Divide evenly (mine made about 12 tortillas)

Roll out as thin as you can

Heat a frying pan over medium heat

Cook the tortilla on the first side till it bubbles

Flip and cook the other side
