Lentils quick healthy
Lentils are a low fat and low calorie food. They cook up quicker than regular beans, and are tasty. My kids love lentils. I make a simple budget friendly stew which I serve over rice.
- 1 lb lentils
- One large onion (divided)
- 3 medium carrots
- 14 oz can diced tomatoes
- 6 cups water
- 3 bouillons chicken stock
- 1 tablespoon mild curry powder
- 1/2 cup sour cream
1. Add lentils to boiling water2. Add chopped onions and diced carrot3. Add bouillons4. Simmer till lentils are tender5. In separate pan, fry onions in little oil, add curry powder and tomatoes6. Add the lentils and sour cream and stir till heated through.
