Bacon, Tomatoes and Cheese Fingers

This was a perfect lunch after Church today.  The kids had filled up in cookies and cake after church, so Sunday lunch is usually simple.  Bacon and tomato is always a great combination.  Turning the oven on a crisp fall afternoon is a welcome treat; the only drawback is the fact that the tomatoes are not homegrown.  I also served he kids with nice red delicious apple. 

Ingredients

  • 6 slices of Bacon

  • 2 tomatoes

  • 4 slices of whole wheat bread

  • 8 slices of cheese (I use cheddar)

 

  1. Preheat oven to 400.

  2. Cook the

  3. Bacon on a baking pan in oven

  4. Drain bacon then crumble

  5. Slice the tomato

  6. Layer tomatoes on bread, followed by crumbled bacon then top with cheese

  7. Bake for 8 minutes or until cheese is bubbly

  8. Slice the bread into strips
